Low Carb High Protein Gluten Free Bread Recipe

I’ve finally found a low carb gluten free bread I enjoy! I’m so excited to have bread again! If you are eating a low carb or keto lifestyle or are sensitive to gluten and are looking for a nice bread option…here you go…only 3.8 grams of net carbs per slice!

I like a slightly more hearty and dense bread so this suits me fine. If you’re looking for a light and fluffy option, you may be able to modify it by using egg whites instead of eggs. That is the next experiment on my list.

The original recipe comes from Wholesome Yum. (I made a few minor tweaks)

Ingredients

  • 3 cups almond flour (sifted)
  • 1 cup flax seed meal (ground flax seeds)
  • 1.5 Tbsp baking powder
  • 2 Tbsp Monkfruit with allulose blend (granular)
  • ¾ tsp salt
  • 8 large eggs (at room temperature)
  • ½ cup salted butter (melted)
  • 1 cup hot water
  • 1/3 cup flax seeds

Instructions

  1. Preheat the oven to 325 degrees F (163 degrees C). Line the bottom and sides of a small loaf pan (8.5in x 4.5in x 2.75in) with parchment paper.

  2. In a large bowl, stir together the almond flour, flaxseed meal, baking powder, sweetener, and salt.

  3. In a medium bowl, whisk the eggs for 2 minutes, until very frothy. Stir the eggs into the dry ingredients.

  4. Stir in the melted butter, then the warm water. Add the flax seeds to the batter, if using.

  5. Pour the batter into the lined pan. Sprinkle more flax seeds on top if you like.

  6. Bake for 40-50 minutes, until the top is a dark golden brown.

  7. Tent the top with foil and continue baking for 10-20 more minutes, until the bread feels very firm, and the top is crusty. (An inserted toothpick should also come out clean, but this typically happens before it’s completely done, so check both.)

  8. Remove the flaxseed bread from the oven. Cool in the pan for 10-15 minutes, then transfer to a cooling rack to cool completely.

  9. Wait for the bread to cool before slicing. (Good luck if you can do this!)
